So what are the true stories of wrestlers shooting on their opponents? One that springs to mind is Regal vs Goldberg. I don't know the full story of this. Perry Saturn once beat the hell out of a jobber for stiffing him with a punch.

Somewhere on an old video tape I have a match between the Dream Team (Beefcake and Valentine) and the Can-Am Connection (Martel and Zenk) and at one point something goes wrong, can't remember exactly what, but I think Zenk grabs a handful of Valentines hair and gives it a painful yank, Valentine looks legit upset, grabs Zenk and gives him a few stiff shots before calming down, and this was in the days when I knew wrestling was fixed and just watched it for the enjoyment, it really stood out as a point where someone got smacked properly.
I had a thread on here pointing to the Brody and Lugar cage match on youtube, strange match, Brody just loses interest and stops selling and looks to go in stiff with a few moves, so Lugar gets out of the cage.
I am reading the history of the NWA in the book "National Wrestling Alliance; The untold story of the monopoly that strangled pro wrestling" and there are quite a few double crosses and shoots in that. Interesting book.
